Along with being a breeze to throw together on a whim, it is super healthy!

What in the world is Almond Butter Bark, you ask? It’s kind of unlike anything else. At least this recipe is, anyway. It’s very thin, nice and crispy, and also rich in flavor. You can make it very easily, with very few ingredients, and have it ready to gobble up in no time!

I’ll admit my family is hesitant to my healthy recipes at times (let’s just say I’ve come a lonnnnnggg way in my cooking abilities), but when I make this delicious treat my entire family loves it!!

For me, it serves as a deterrent from my constant urge to grab a piece of chocolate and throw it into my mouth!

How You Make It

You’re going to love how easy it is to make. Simply melt the coconut oil, then mix in the other ingredients (except cocoa nibs) into a medium-sized bowl. You’ll line a baking sheet or dish with parchment paper, and pour in the mixture. Sprinkle the cocoa nibs over the top, and voila! Ready for the freezer!

Throw it into the freezer for about 30 minutes, then remove it and break the solid piece in to smaller pieces. If you’re more of a “perfect squares” type of person, cut it with a sharp knife!

Either way you like it, you can store it in an air-tight container of baggie, in the freezer. These delicious little treats will melt at room temperature, so grab them when you’re ready to eat them!

How To Sweeten Your Almond Butter Bark

Throughout my 160-pound weight loss journey, I’ve learned a lot about satisfying my sweet tooth without overloading on sugar or chemical sweeteners. What I use in this recipe is something called PYURE (find it on Amazon), which I absolutely swear by. It’s an organic stevia blend and is the closest taste to sugar I’ve found. I use it in smoothies and my morning cup of coffee as well.

If you don’t have any on hand, you can certainly swap out the Pyure for something like 2 Tablespoons of Maple Syrup or Brown Rice Malt (which is a low GI-Index way to sweeten). Those do have actual sugar in them, as well as calories. But either is a great option for keeping this recipe healthy and delicious.

Ingredients

Instructions

  • Melt coconut oil in a medium-sized bowl
  • Combine all other ingredients except cocoa nibs
  • Mix together until smooth
  • Line a large baking dish or cookie sheet with parchment paper
  • Pour mixture onto the parchment paper and spread thin
  • Place in freezer for approximately 30 minutes
  • Remove from freezer and cut into smaller pieces, OR just break apart like I did
