Easy Healthy Salad For Quick Meal Prep

The first thing I did when I got back from my weekend getaway was throw together my easy, healthy, go-to salad. I needed something that would melt the water-weight away and help me get my eating back on track.

This simple, six-ingredient salad has been a life-saver more times than I can count! It requires minimal cooking time, and is really tasty without dressing! I know, crazy right?? But if you want a salad that’s super clean, super easy, and requires only a few ingredients, try this one! Even my health-food-critic hubby likes it!

Easy Healthy Salad

Meal prepping this salad makes things much easier because it keeps me from grabbing other, less healthy food options in a rush. I make five containers at once, and they last me Monday through Friday. Unless my hubby steals them for his lunch, which of course does happen. A lot. 😉

I am a salad dressing snob, and quite prefer my own ranch dressing recipe over any other dressing. It’s healthy and absolutely DELICIOUS! It’s also vegan, which you would never guess by tasting it. It will make your salad come alive, so definitely try it!

And I Mean, Super Healthy!

When I make this salad, however, I don’t use any salad dressing at all. This salad is specifically my go-to for when I need to lean things down a bit, pull back on my eating, and reel in my cravings.

I use grass-fed turkey breast as my protein, but you can use another protein option of your choice. Something like chicken breast or grass-fed lean beef would also work.

Simple Salad, Simple Prep Work

You can enjoy this salad cold if you’d like, by simply grabbing it from the fridge, giving it a good stir, and enjoying every last bite!

What I like to do, is remove the spinach and seeds from the container, warm the other ingredients for 90 seconds, and then stir it all together for a warm lunch.

You do whatever works best for you!

Six Ingredient Easy Healthy Salad

My go-to salad that is super easy to throw together on a whim and will help you get your nutrition back on track!

Ingredients

  • 2 Pounds Ground Turkey Breast
  • 5 Cups Spinach
  • 2.5 Cups Brown Rice and/or Quinoa
  • Sunflower and/or Pepita Seeds about 3 Tbsp per salad
  • Pink Sea Salt (as desired)
  • Mrs. Dash Original Blend (as desired)

Instructions

  • Fill each of your five meal-prep containers with a handful of spinach (approximately 1 cup per container). I typically tear the spinach into smaller pieces, and then place the spinach into one side of the meal prep container.

  • Pre-cook ground turkey breast to your liking. I use sea salt, garlic powder, onion powder, and pepper. But sometimes I just use pink sea salt and Mrs. Dash! Allow to completely cool before placing into the container. Approximately 2/3 cup will be divvied into each container.

  • After preparing your rice and/or quinoa (I use an instant brown rice and quinoa mixture), let completely cool, and then place 1/2 cup into each container.

  • Using small containers, proportion 3 TBSP sunflower seeds or pepitas into each meal prep container.

  • Sprinkle pink salt and Mrs. Dash Original Blend onto the spinach.

  • Be sure that all ingredients are completely cooled before adding them to the containers. For example you don't want to have spinach and warm rice in a container together as it will cause the spinach to become limp.
  • When ready to eat this salad, you can eat it cold, or remove the spinach and seeds, heat the remaining ingredients for 90 seconds, and enjoy your salad that way.
