With the cooler weather slowly creeping in I can hardly wait to sink my teeth into these delicious pumpkin spice oatmeal muffins! This past weekend I lit all my cinnamon and wood pipe scented candles, opened the windows, and made a double batch to share with my neighbors and family. Everybody was a fan, and it was such a great way to kick off the fall season!

I’m a big believer that something should taste delicious first, and then fall under the healthy category. I don’t eat food I don’t like just to manage the number on the scale. No way! I eat what I like and try to make some healthy substitutions if I can do so without sacrificing on deliciousness.

These pumpkin spice oatmeal muffins definitely fall into both categories, easy! In fact, I make them knowing that I’ve used healthy ingredients, but I don’t tell anyone I share them with. They have no idea that there’s actually no added sugar or brown sugar added to this quick pumpkin muffin recipe. They’re clueless that there’s no flour or sugary syrup. Nope! None here, but you’d never know it!

Healthy Pumpkin Spice Muffins? Yes please!

You’ll quickly learn that instead of flour, I use oats to bind these tasty little bread-like muffins together. Not only do I use whole oats, but I also grind some oats in my blender, making my own oat flour in seconds! Along with that, I use egg whites and plain Greek yogurt, with the perfect blend of baking powder and baking soda. This is the base of the muffins. Then the magic happens and all the glorious flavors come together to make each bite decadently delicious.

Instead of straight-up sugar, I use a stevia blend called Pyure. I know what you’re thinking, you hate stevia! I get it! I’m not the world’s biggest fan either, but this particular stevia blend literally tastes and even smells delicious. Some of my most harsh critics have tasted this blend and shockingly fallen in love. It’s cheap, you can buy it on Amazon, and it is a massively healthy swap that absolutely does not take away from taste or texture.

The other jaw-dropping swap is that I use Swerve instead of brown sugar. This is another substitution that will blow your mind. I’m serious, it tastes like actual brown sugar but it is sooooo much healthier! It’s also cheap and available on Amazon, so there ya go!

The next healthy swap I make is the chocolate chips. I like to use Lily’s Chocolate Chips because they are stevia sweetened but taste absolutely delicious. They melt in your mouth and the flavor is just oh so good. You can get them at most grocery stores, but also on Amazon. Can you tell that Amazon is my go-to?

Is It Cake, Bread, or Muffins?

I used to make this as more of a bread (think Banana Bread texture), but now I make them as muffins. My kiddos prefer them and so do I, so that’s what we do! I use a muffin pan like this one because it’s silicone so it doesn’t need cooking spray and it’s easy to clean, but I also use my jumbo-sized muffin pan from time to time. You just have to decide if you want one big muffin or two littles!

We sometimes add a cream cheese filling to make them more cupcake like. But that’s only on occasion (i.e. if I feel like adding steps to the process). When I do, I just mix together 4 ounces of cream cheese, two teaspoons of flour (I use coconut), a splash of milk, a hefty dose of vanilla extract, and some sugar or Pyure (stevia blend). Not gonna lie… it’s absolutely delicious when you make your pumpkin spice oatmeal muffins with cream cheese filling.

How To Eat Your Pumpkin Spice Oatmeal Muffins

There’s no right way to eat these wonderful little delights! I like to top them with some chocolate chips or roasted pepita seeds. If you want to make some cream cheese filling, go for it! You can use a ziplock baggie to pipe it into the raw batter right before you put the muffins into the oven. Same with the other toppings, just sprinkle them on top right before baking.

Once prepared, you can eat them warm, room temperature, or cold. You can store them in the fridge, or (once fully cooled) freeze them! Sometimes I microwave them and spread a little butter on top (that’s my favorite way to enjoy them). You could also try this Pumpkin Spice Honey Butter recipe that is unbelievable!! You eat them however you like!

I’d definitely pair them with coffee, however. And if you want a way to make a delicious and healthy cup of coffee, this is my go to!

Pumpkin Spice Oatmeal Muffins

Savory pumpkin spice recipe for fall! You can make these into muffins or bread, and the whole family will love them! You'd never know by tasting them but there is no added sugar! They are sweet and decadent and the perfect addition to the season!

Ingredients

  • cooking spray
  • 10 ounces pumpkin puree canned
  • 2 cups Old Fashioned Rolled Oats
  • 1/2 cup Old Fashioned Rolled Oats Ground Into Flour using blender or food processor
  • pinch salt I use pink sea salt
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 3/4 cup Pyure This is a replacement for sugar!
  • 1 cup Swerve Brown Sugar This is a replacement for sugar!
  • 1 cup Plain Greek Yogurt
  • 1 cup Egg Whites From a carton is fine!
  • 1 tbsp Cake Batter Extract optional but highly recommended
  • 2 tbsp Pumpkin Pie Spice
  • 1 tbsp Nutmeg
  • 1 tbsp Cinnamon

Notes

Combine all ingredients into a large bowl and mix well. Pour into a muffin pan, bread pan, or baking dish and bake at 350 degrees until golden brown and cooked all the way through.
