Healthy Single Serve Stovetop Popcorn Recipe

I am absolutely obsessed with this stovetop popcorn recipe.

Actually I’m obsessed with ANY popcorn recipe. I could eat popcorn for dinner every night and be just fine.

But since popcorn doesn’t contain the necessary array of nutritional value that’s needed for a healthy lifestyle, I have to keep my popcorn addiction in check.

I do that by sticking to a delicious, healthy (and super easy), single serve popcorn recipe. Because let’s be serious. If I make a bag of microwave popcorn, I’m eating that whole dang bag.

But honestly I like the fresh taste of actual kernels freshly popped and drizzled with (…you betch!) BUTTER!

Real butter. Not chemical filled taste-alikes. No special seasonings. Just some good old salt and butter. This makes for a clean and healthy recipe (because butter is actually not a terrible fat to consume) that keeps me aligned with my health goals.

And here’s my big warning: PAY ATTENTION! THOSE KERNELS POP QUICK!

Honestly, you’ll end up with burnt popcorn smelling up your house if you’re even a couple of seconds late in getting the pan off the burner. So pay very close attention or you’ll be dumping the burnt batch and trying again!

Here’s How to Make a Single Serving of Stovetop Popcorn

Use a nonstick pot with a lid like this one. Place it on the burner and turn to medium heat. Drop a spoonful of coconut oil into the bottom of the pan. You can eye it, but I use about a tablespoon. Immediately afterwards, drop two to three tablespoons of kernels into the pan. Place the lid on the pan.

Soon enough you’ll start to hear the kernels begin popping. Pick the pan up and give it a good shake every few seconds. This will ensure that you don’t overcook (aka burn) any of the kernels. As soon as you hear the kernels popping slowing down, remove from the heat but leave the lid on for a few seconds so the last few kernels can pop. Just don’t leave it too long or it’ll burn!

Remove the lid, sprinkle some pink salt (or regular salt, but pink salt is delicious).

And voila! Dump it into a bowl and enjoy every single serve salty crunchy bite.

Sweet or Savory? Or both!

You can take it a step further by adding some melted butter over the top. This will make your popcorn absolutely delicious.

Or, you can make it sweet and savory. Place about a tablespoon of butter in a small skillet along with some Pyure (stevia based sugar alternative) and cinnamon. Allow it to melt just into a light boil and then remove and pour over popcorn immediately. Holy yum.

Ingredients

  • 1-2 tbsp coconut oil
  • 3 tbsp popcorn kernels
  • 1 tbsp butter optional
  • sprinkle pyure optional
  • sprinkle cinnamon optional

Instructions

  • Begin by placing the pot on the burner and turning to medium heat
  • Place coconut oil into pot
  • Add popcorn kernels to the pot
  • Place lid on pot
  • As soon as you hear the kernels begin popping, give the pot a good shake every few seconds to avoid burning NOTE: this happens quick! Pay close attention to avoid burning!
  • When kernel popping slows down, remove from heat but keep the lid on the pot
  • After a few seconds, remove from the heat completely and dump into a single serve bowl

Notes

If you’d like to add butter, simply melt the desired amount in a small skillet or in the microwave. You can also add Pyure (a stevia based sugar alternative) and some cinnamon to the melting butter for a sweet twist!
