This easy roasted broccoli recipe has been a game changer in my household. Not only because it’s really yummy, but also because I can use the same method to roast nearly any veggie!

Throughout my weight loss journey I’ve learned how important it is to eat veggies every single day. But being a busy mommy, I just don’t have a ton of time. I absolutely love meal prep but in this chaotic season of life with littles, I have to be able to throw a meal together at a moment’s notice.

Because let’s face it. Mom life is completely all over the place and no two days look alike!

A Broccoli Recipe My Kids Actually Like!

Sure, there are several billion different ways to make roasted broccoli. Give or take. But this one works great, and is clean and healthy (no need to smother it with cheeses or creams)!

Fun fact: the day I made this recipe for the sole intent of taking pictures for you visual learners out there, I took the bowl of broccoli as I ran out the door to pick up my six-year-old from school. She scarfed down the entire bowl as soon as she got in the car. And she’s my picky eater.

Now surly there will be toddlers all across the world refusing to eat this recipe. Because #ofcourse. But in general, it’s pretty tasty, if I do say so myself!

Without further ado… let’s get to the good stuff!

Easy Roasted Broccoli Recipe

Roasted Broccoli

Use this method to whip up a delicious side of roasted broccoli on a whim! Try it with any of your other favorite recipes by adjusting cook times and seasonings!

Ingredients

  • Broccoli (fresh or frozen)
  • Olive Oil Cooking Spray
  • Salt (I use pink sea salt)
  • Pepper
  • Mrs. Dash (I use Table Blend)

Instructions

  • Heat oven to 400 degrees.
  • Spritz cookie sheet with cooking spray.
  • Place desired amount of broccoli on cookie sheet. 
  • Spritz broccoli with cooking spray.
  • Season with Mrs. Dash (Table Blend), garlic powder, salt, and a little bit of pepper.

  • Bake for approximately 20 minutes, but this varies based on your oven, so cook until it’s browned to your liking.
  • Remove from oven, plate, enjoy!

My favorite way to enjoy this is with slivered almonds and sesame seeds. You can sprinkle them on top of your broccoli a few minutes before removing from the oven, or you can roast them separately and sprinkle them on top once you plate.

Either way, this easy little addition adds flavor, texture, and additional nutrients. Drizzle a little ranch over top if you need something extra (just don’t overdo it!).

Change It Up!

Use this roasting method with nearly any vegetable. You’ll want to vary the seasonings you use based on which veggies you are choosing, but throwing them onto a cookie sheet and roasting with some cooking spray and seasonings is a fantastic way to get more veggies in. You can even roast several different veggies on the same cookie sheet at the same time, just make sure you’re paying attention to how long each respective veggie will need to cook. Try some experimentation with this method! You’ll love the flavors you’ll discover!
